Crispy lettuces with Tangerines, Parsley, and Sherry Vinaigrette





This is a great winter salad, and it's super easy. I hope you'll try it.

1 bag Italian lettuce blend (or whatever crunchy lettuce you like)
1 tangerine, segmented
1 Tablespoon fresh parsley leaves, kept whole or torn
1 Tablespoon champagne vinegar
1 Tablespoon sherry vinegar
1/2 shallot, finely chopped
Salt and pepper
6 Tablespoons Extra Virgin Olive Oil

1. Combine vinegars, mustard, shallot, and a pinch of salt. Let sit for a few minutes.

2. Slowly whisk in the olive oil.

3. In a large bowl, toss together the lettuce, tangerine, parsley, and vinaigrette.

Serves 4. (With extra vinaigrette to save in the fridge)
